A lovely Aussie friend was recently telling me about her menu plans for Thanksgiving, and my interest was piqued when she mentioned that she would be making a cheese ball for the appetiser. Her cheese ball, if she was still in Australia, would have been comprised of cream cheese with cheddar and good ol’ Coon, sprinkled with curry powder and decorated with fried onions. I was instantly transported back to the 1980s in Australia and my heart warmed with such nostalgic memories.

One of my favourite snacks when I lived in Australia were cheese scrolls from the local bakery. In fact, as a child of parents who ran a busy Vietnamese bakery, I often lived for the moment when the cheese scrolls came fresh out of the oven. Even better when there were onions in the mixture. My parents also made pizza scrolls as a variation, but I had a soft spot for just the plain cheese version.
But those who know me will know that I can’t just simply sit down to a mere bowl of soup for dinner. Maybe as a starter, but for a complete meal, I need something a bit more. Some bread on the side is a must, and this Rustic Bacon & Cheddar Bread is a quick and simple way to bulk up a meal.

Most people would be familiar with a Croque Monsieur which is a toasted cheese and ham sandwich, commonly served in most French bistros for lunch or as a light snack. For a more decadent treat, the Croque Monsieur is also sometimes coated with a béchamel sauce and baked in the oven until the sauce is golden and bubbling.
A Croque Madame, on the other hand, has the addition of an egg.

Faced with some bits and pieces of leftover cheese in the fridge, I thought I would try my hand at a savoury waffle for lunch today, and these waffles with Gruyère and fresh thyme were absolutely scrumptious!
