Cheese Waffles

Delicious Cheese Waffles with Gruyère & Thyme which are perfect as a light meal or served alongside a bowl of soup.

Ingredients

  • 200 g (1 ⅓ cup) plain flour, (all-purpose flour)
  • 5 g (1 teaspoon) baking powder
  • 6 g (1 teaspoon) fine salt
  • black pepper, freshly cracked, to taste
  • 4 g (1 teaspoon) caster sugar, (superfine sugar)
  • 2 eggs
  • 100 g (1 stick) unsalted butter, melted and slightly cooled
  • 300 ml (1 cup plus 3 tablespoons) milk
  • 100 g (3 ½ oz) Gruyère, coarsely grated
  • 1-2 tsp thyme, chives and/or parsley, finely chopped (optional)

Instructions 

  1. Make sure the eggs and milk are at room temperature.
  2. In a large mixing bowl, combine the flour, baking powder, salt, pepper and sugar.
  3. In a small bowl or jug, whisk together the eggs, milk and butter.
  4. Pour the wet ingredients into the dry ingredients.
  5. Whisk everything together until you have a smooth batter.
  6. Add the cheese and chopped herbs (if using). Whisk these ingredients in lightly.
  7. If the mixture is too thick, add a little milk to thin the batter.
  8. Heat the waffle machine according to the manufacturer's instructions.
  9. Pour some batter into the machine, making sure it covers most of the mould.
  10. Close the lid and cook according to the manufacturer’s instructions.
  11. This recipe makes 6 to 8 waffles if using a heart-shaped waffle machine.
