Today was a grey and gloomy day in Zurich, which meant the only reasonable thing to do was to stay indoors and make waffles with salted caramel sauce for lunch. That’s right – lunch. With the rain drizzling outside and temperatures nearing frosty, neither my husband and I were willing to venture outside for provisions. A quick inventory of the fridge and pantry revealed lots of food which would require lots of preparation, so I settled on making waffles – something easy and lazy and which my picky toddler was likely to eat quietly and gratefully.

The waffle recipe I use is similar to a pancake batter, i.e. it is a yeast-free recipe which takes mere minutes to whisk together. And the salted caramel sauce is a breeze to make if you have some golden syrup or light corn syrup in the cupboard.

Dessert for lunch is admittedly not an everyday occurrence in our home, but sometimes you just have to take the lazy option.

Instructions

  1. To make the waffle batter, place the flour, baking powder, salt and sugar into a large mixing bowl.
  2. Pour the milk into a large measuring jug, add the eggs, and whisk lightly.
  3. Whisk the milk and egg mixture into the dry ingredients.
  4. Lastly, whisk in the melted butter.
  5. Set the batter aside to rest for 15-30 minutes.
  6. Meanwhile, make the salted caramel sauce by melting the butter with the light muscovado sugar, caster sugar and golden syrup. Simmer the sauce gently over medium heat until it darkens slightly and thickens. Carefully whisk in the double cream and simmer until the sauce is a thick but pouring consistency. Take the sauce off the heat and add the salt, a little at a time to taste.
  7. Preheat the waffle maker and cook the waffles according to the manufacturer’s instructions.
  8. Serve the waffles with a light dusting of icing sugar and salted caramel sauce on the side.

    Green with envy!! (once again…).

    I don’t know which is worst, if the shape of your waffle maker (mine is one of those that makes two rectangular, not this cute shape), or the spoon.
    You can’t imagine how much I love that spoon!! Really, if given the choice between Kitchen aid and that spoon, I’d choose the spoon. It’s so so so so cute!!!

    I like this type of caramel sauces, when you don’t have to melt sugar alone in the pan. It’s a technique that gives me laziness and fear, and keeps me away from tarte tatin 😛

    I’m more of yeast waffles, but the truth is that, I hardly ever would use my waffle iron if I couldn’t make fast recipes like this 😉

    Bacon and maple syrup for me, please!

      Oh I love this spoon too 🙂 In fact, I have unwittingly started a collection of these vintage spoons which, I’ve been told, are used for dusting icing sugar. Sooo cute!

      My husband frowned when he first saw me come home with this heart-shaped waffle maker, but it makes pretty good waffles, so he can’t really complain now 😉

      And as for the caramel sauce, you know me! I’m not very good at making caramel from melting sugar first, although I’m getting a bit better at it. This particular recipe is really quick and easy, even if it feels a bit like cheating 😉 And funny that you mention tarte tatin … I’m thinking of making one tomorrow but still haven’t found the “right” recipe … maybe tomorrow!

      Oh thanks, Louise! I think I’d like a more traditional waffle maker but can’t really justify owning two when the heart-shaped one makes both cute and crispy waffles 🙂
