I had an inkling to make waffles for breakfast this morning, and upon waking to see the snow falling heavily outside, thus meaning a day of welcome indoor activity, I set about humming in the kitchen. But faced with a slight over-supply of bacon in the fridge, it was time to turn my usual waffles sprinkled with icing sugar into something more savoury at breakfast.

Pancakes with bacon and maple syrup is nothing new, but replacing the pancakes with waffles is not something that had crossed my mind before, although I doubt that it is anything revolutionary and that our friends across the pond in the US probably regularly sit down to waffles with a generous lashing of maple syrup and a side of crispy bacon.

The advantage of eating waffles with maple syrup is that, because they are crispy in comparison to pancakes, they don’t go soggy the way pancakes do when you serve them with maple syrup. It’s not a very significant finding, I know, but one which makes a difference for me. I still love my fluffy pancakes, but it’s nice to know of an alternative way of serving waffles at breakfast.

Mmmmm! Ooo a quickie but a goodie Thanh! I adore your waffle maker (aw to the dinky heart shapes) and the combo of sweet maple syrup with the caramelised salty bacon? Yup, that’s a marriage made in heaven alright! Sigh, beautiful photos of naughty food – think I need to go do my work out DVD after just reading this one ;) xxx

Hi Jodie! Happy New Year to you also! Yeah, I’m not too sure about how well my resolutions to eat heathily are working out so far … at least we had a relatively heathly dinner to compensate for the extravagant breakfast :-)

PS: I soooooo want that waffle maker but the price here is eye-watering! Next best thing is ogling and salivating over your beautiful breakfast :-) )

Aww thanks, Carrie! It’s interesting to hear that this heart-shaped waffle maker is so expensive where you are, especially considering that it was the cheapest I found in Zurich! I almost bought a second waffle maker recently in the more traditional square shapes, but my shopping companions got a bit impatient … oh well, wasn’t meant to be ;-)

Oh Thanh! I am giggling cos your husband is right…you’re place will start to look like the wee crockery place you just visited!
Having said that, I guess the traditional one actually gives you a different, more deep, fluffier texture doesn’t it?

I know, I know … I dread the day we have to move (again!) because I fear knowing the true extent of my kitchen belongings! The traditional waffle makers produce thicker but crunchier waffles. But now that I have sampled quite many waffles, I rather like my heart-shaped one :-)

Heaven help me!!!  I just dribbled a bit (lot) looking at your stunning pictures Thanh :-)

How do you get your waffles so neat and tidy round the edges? Do you spend ages trimming and shaving the rough edges to get them picture perfect? ;-)

Beautiful post as always, but then I’ve come to expect nothing less. :-D

Two words I think I would attribute to Thanh would be neat and tidy!! I have always said that for me, her care over whatever she does, her attention to details, comes through, be it the food itself or the pictures :-)

Thanks ladies :-) I think I have made waffles often enough now to know just how much batter to use ;-) (1/4 cup, in case you were wondering!) Which is a good thing in the sense of justifying the purchase of the waffle maker in the first place, but not so good for the hips!

My friend calls our waffle makers the “4th emergency service”!!!

I made them just recently for jo’s 40th birthday with cherry syrup and fruit. Delicious yes but i kust confess a peeference for this savoury version. I must make them again and perfected a more slimline recipe its ok to indulge more often saving the real deal for special occasions!

Hi Julia! Thank you again, as always, for your lovely words :-) A slim recipe for waffles sounds like the way to go at this time of year, but your version for Jo’s birthday sounds delicious! My waffle maker happens to make fairly thin waffles … does this mean they are healthier? ;-)

Oh I’m glad my comment makes sense to someone else! As much as I love pancakes and maple syrup, I find I have to go easy on the maple syrup because I’m not a fan of soggy pancakes. But with waffles, I can have all of the maple syrup I want :-)
